I had the most delicious dinner the other night, it was sooooo yummy I will be making it over and over again. I made this dinner as a low calorie meal because I am trying to get healthy.
It is grilled salmon, veggies and fruit (peppers, tomatoes, melon) on a spicy peri peri rice. I chopped all the pieces of food and put them onto a tray and poured I little rapeseed oil over all the pieces and grilled it for about 10 minutes.
I have always ate quite healthy for dinners and lunches. I really love fruit and veggies so eating healthy foods is not a problem for me, the only problem I have is my love for the sweet and sugary foods too, however, I haven't ate a packet of crisps or chocolate in the last 5 months. I feel very proud of myself :-) and I am really surprised because I don't crave or miss these types of foods anymore which its great. I hopefully I can keep it up (fingers cross ) :-).
